Apple Cake with Caramel Sauce

CAKE
2 eggs ½ cup vegetable oil
4 cups finely chopped peeled apples 2 cups flour
2 cups sugar 2 teaspoons baking soda
2 teaspoons cinnamon 1 teaspoon salt

CARAMEL SAUCE
½ cup (1 stick) butter ½ teaspoon vanilla extract
½ cup sugar ½ cup half-and-half
½ cup packed brown sugar

For the cake, beat the eggs in a large mixing bowl. Add the
apples and mix well. Stir in the sugar. Add the cinnamon, oil, flour,
baking soda and salt and mix well. The batter will be thick. Pour into
a greased 9x13-inch cake pan. Bake at 350 degrees for 45 minutes.

For the sauce, melt the butter in a saucepan. Stir in the sugar,
brown sugar, vanilla and half-and-half. Bring to a boil to dissolve the
sugar, stirring occasionally. Serve warm over the cake.
